Vineyard: Our vineyards are located 120 meters above sea level, facing a south/south-western exposure. Temperate maritime weather pervades throughout the growing season, creating optimal climatic conditions for the vines. Following pedantic cluster selection, the grapes are all picked by hand.
Total Acid: 5,20
Alcohol: 14%
Vintage: Harvest began on our estate vineyards on September 5 and stretched until 8th for the Merlot. We proceeded with the Cabernet Sauvignon from the 15th to the 20th of September.
Fermentation: Once the grapes arrived at the winery, they were destemmed and gently pressed to retain quintessential qualities. The wines were fermented in stainless steel vats at 31-32°C, 18 days for the Merlot and 21days for the Cabernet Sauvignon.
Aging: The wine was aged separately in both new French oak barrels for 18 months. The finished wine was then aged for a further 6 months after bottling (without fining, light filtration) in June 2002.
Total Products 2000: 30.000 bottles (6 bottles for wood cases)

Fermentation: Once the grapes arrived at the winery, they were destemmed and gently pressed to retain quintessential qualities. The wines were fermented in stainless steel vats at 31-32°C, 18 days for the Merlot and 21days for the Cabernet Sauvignon.
Aging: The wine was aged separately in both new French oak barrels for 18 months. The finished wine was then aged for a further ten months after bottling (without fining, light filtration) in August 2003.
Total Products 2001: 28.000 bottles (6 bottles per wood case)

Vineyard: Our vineyards are located 120 meters above sea level, facing a south/south-western exposure. Temperate maritime weather pervades throughout the growing season, creating optimal climatic conditions for the vines. Following pedantic cluster selection, the grapes are all picked by hand. The oldest vines have been planted in 1988. The density is 3.600 to 4.200 plants/ha.

Alcohol: 13,5 %
Vintage: Harvest from September 9 for the Merlot. We proceeded with the Cabernet Sauvignon and Petit-Verdot on September 25th.
Fermentation: Once the grapes arrived at the winery, they were destemmed and gently pressed to retain quintessential qualities. The wines were fermented in stainless steel vats at 31-32°C, 18 days for the Merlot and 21 days for the Cabernet Sauvignon. The malolactic fermentation took place in stainless steel tanks for about one month. After this period we racked the wine in oak barrels and stirred the lees weekly.
Aging: The wine was aged separately in new French oak barrels from Allier/Troncais for 18 months.
Total Production 2005: 25.000 bottles (6 bottles in wood case). Available also in Magnum, Double Magnum and Methusalem bottles.
